For the Love of Beef

okay, maybe there is hope that this one is a girl. the past, couple of months i have lost my love for eating beef. i don't like to cook it or smell it, or sink my teeth into a big, juicy burger. right now i blame it on the fact that we've run out of the beef we bought from my grandpa and are eating our own, but it was fed well too. hmmm... i guess it's not totally beef either. the pig we bought at the fair is only a once a week thing too, i have to have a lot of variety! maybe this IS a girl that loves poofy dresses and chicken (just to spite me)! :) i'll teach her that there is nothing better than beef that comes from park valley. it really is delicious! until then, here is a chicken recipe i made up a while ago and tried to perfect last nite. turned out pretty good!

chicken roll-ups, i call them...and i'm not much of a measurer so good luck if you try!

abt. 2 cups chicken, cut into bite-sized pieces
1 c. shredded carrot
2 c. shredded cabbage
1/2 c. sour cream
1 pkg. knorr vegetable or spring vegetable seasoning (i only used 1/2 the pkg)

cook the meat and veggies in a skillet until tender, then add sr cream and seasoning and heat thru. can use other veggies too (i.e. broccoli, etc.)

while cooking, make the dough:
3 c. flour
1 1/2 T. baking powder
1/3 tsp. baking soda
1 1/2 tsp. salt
almost 1 1/4 c. buttermilk
abt. 1/3 c. oil

mix all the dry ingredients then add the buttermilk and oil. mix together until dough is like biscuits. roll out 1/4 inch. thick. cut into abt. 9 rectangles and fill with chicken mixture. roll up each one and seal on both ends. place on a greased cookie sheet and cook for abt. 12 min at 420 degrees. sorry there are a lot of "abouts"...just the way i do it and doesn't look like we're starving around here!

Just might be a girl...I couldn't stand any sort of protein when pregnant with Katy! Wierd, but I guess she turned out (kind of)maybe that is why she won't eat protein herself. =)

You are quite the chef, I don't think I have ever made up a recipe!

Maybe...with Makinzi the smell of meat would make me gag! However, with Madi I couldn't get enough of the greasy burgers and fries!

I'll tell grandpa that his beef is the "Best in the West" that will make him happy! Also, we'll hope for a girl that likes beef!
